Black mustard belongs to the brassica family. The seeds are very small, with a diameter of 1 mm, round in shape and dark brown to almost black. Soak the seeds in water overnight and then rinse 2-3 times a day. During the first few days the seeds smell slightly, but if you rinse them more often, the smell will soon disappear. They germinate very quickly. The sprouts are usually ready within 5-6 days. But pay attention to the ambient temperature and sunlight. At higher temperatures, mustard spoils easily, so you must keep an eye on it in summer or leave it for cooler times.
Black mustard sprouts are very rich in proteins and carbohydrates, and contain vitamins A, B and C, as well as the minerals calcium, iron and phosphorus. Mustard sprouts support blood circulation, help against muscle pain, and relieve fever and the feeling of cold.
Black mustard sprouts are used to flavour vegetable salads or fresh cheese. They are much sharper than white mustard sprouts, which is why they are most appreciated by people who like spicy food. Thanks to their sharp and distinctive flavour, these sprouts are especially recommended for spicy dishes, salads and sandwiches.
The sprouts contain a higher amount of phytoncides with bactericidal properties and vitamin B2 than other mustard varieties.
They also contain fibre, saponins, flavonoids and plant hormones, which beneficially regulate the functioning of the entire organism.
Black mustard sprouts are easier to grow than white mustard sprouts, because they release much less mucus during the germination process.

During germination, the roots create root hairs, which may resemble mould; do not be alarmed, they disappear once rooted. The plants are smaller, and once rooted it is no longer advisable to mist them from above, as they could start to rot. Mustard is a very rewarding microgreen and is suitable for all dishes
